Roasted Pork And Tomatoes
- 4 tbsp olive oil
- 4 None pork neck steaks
- 1 bulb garlic, halved
- 1 kg mixed tomatoes
- 75 g runny honey
- 1/2 None orange, grated zest
- 125 ml dry white wine
- 400 ml stock
- 4 sprigs fresh thyme, little reserved for garnish, remaining leaves stripped from stems
- 4 sprigs fresh rosemary, little reserved for garnish, remainder roughly chopped
- Preheat the oven to 400u0b0F. Heat 2 tbsp of the oil in a large skillet on medium-high heat. Add the pork steaks in batches and cook for 5 mins, turning once. Season with salt and black pepper and transfer to a roasting pan. Add the garlic to the pan.
- Sprinkle the tomatoes with the remaining 2 tbsp oil and season with salt and black pepper. Scatter around the pork. Mix the honey, orange peel, wine, stock, thyme and rosemary. Pour into the roasting pan.
- Roast for 20 mins. Garnish with reserved rosemary and thyme and serve with sea salt.
