Roasted Pork And Tomatoes

  1. Preheat the oven to 400u0b0F. Heat 2 tbsp of the oil in a large skillet on medium-high heat. Add the pork steaks in batches and cook for 5 mins, turning once. Season with salt and black pepper and transfer to a roasting pan. Add the garlic to the pan.
  2. Sprinkle the tomatoes with the remaining 2 tbsp oil and season with salt and black pepper. Scatter around the pork. Mix the honey, orange peel, wine, stock, thyme and rosemary. Pour into the roasting pan.
  3. Roast for 20 mins. Garnish with reserved rosemary and thyme and serve with sea salt.
