Chili Pork Stir Fry
- 1 tbsp vegetable oil
- 1 1/3 lbs pork, thinly sliced
- 1 None onion, peeled and cut into wedges
- 1 None carrot, peeled, halved lengthways, thinly sliced diagonally
- 2 stalks celery, sliced
- 3.5 oz green beans, trimmed, cut in half diagonally
- 1/4 cup sweet chili sauce
- 2 tbsp fish sauce
- 1 None lime, juiced
- 2 tsp brown sugar
- 1/2 cup peanuts, crushed
- 1/3 cup cilantro, chopped, plus extra to serve
- None None Cooked rice, to serve
- Heat half of the oil in a wok or large frying pan over a medium heat. Stir-fry the pork, in batches, for 1-2 mins, until browned. Transfer to a bowl.
- Add the remaining oil to the wok and heat. Stir-fry the onion, carrot and celery for 2-3 mins, until softened. Add the pork and beans and stir-fry for 2-3 mins, until the beans are just tender.
- Whisk together the sweet chili sauce, fish sauce, lime juice and sugar. Add to the wok and stir-fry for 1-2 mins, until heated through. Remove from the heat.
- Add the peanuts and cilantro and toss to combine. Serve with rice and extra cilantro, if desired.
