Paprika Chicken Casserole
- 4 tbsp olive oil, divided
- 4 None chicken drumsticks
- 2 None onions, peeled and finely diced
- 2 cloves garlic, peeled and chopped
- 2 None red and green bell peppers, seeded and cut into strips
- 4 None tomatoes, diced
- 1 pinch paprika
- 3 stems thyme, chopped
- 3/4 cup dry white wine
- 1/2 cup vegetable stock
- Heat 2 tbsp of olive oil in a frying pan and brown the chicken over medium heat for 5-10 mins until golden brown. Heat 2 tbsp olive oil in a saucepan and saute the onions, garlic and peppers for 5 mins. Add the tomatoes and paprika and season to taste. Cover and simmer for about 10 mins.
- Remove chicken legs from the frying pan and place in the tomato mixture. Add thyme, white wine and stock. Cover and simmer for 30 mins. Serve immediately with a baguette on the side.
