Tuna And Macaroni Mornay
- 9 oz macaroni
- 7 tbsp butter
- 1/4 cup all-purpose flour
- 2 1/2 cups milk
- 3 oz Cheddar cheese, grated
- 9 oz asparagus, cut into 3/4 inch pieces, blanched
- 1 pinch grated nutmeg
- 3 (6 oz) cans tuna in spring water, drained, flaked
- None None green salad, to serve
- Preheat broiler. Cook macaroni in boiling, salted water until al dente. Drain.
- Meanwhile, for the mornay sauce, melt 4 1/2 tbsp butter in a saucepan over medium heat. Stir in flour and cook, stirring, for 2 mins. Stir in milk until smooth. Increase heat and stir until sauce boils and thickens. Stir in 1/3 cup cheese and asparagus. Add nutmeg and season to taste.
- Add pasta, tuna and remaining butter to sauce and toss to combine. Transfer to a baking dish and sprinkle with remaining cheese. Broil for 5 mins, or until cheese is melted and browned. Serve with salad.
