Tuna And Macaroni Mornay

  1. Preheat broiler. Cook macaroni in boiling, salted water until al dente. Drain.
  2. Meanwhile, for the mornay sauce, melt 4 1/2 tbsp butter in a saucepan over medium heat. Stir in flour and cook, stirring, for 2 mins. Stir in milk until smooth. Increase heat and stir until sauce boils and thickens. Stir in 1/3 cup cheese and asparagus. Add nutmeg and season to taste.
  3. Add pasta, tuna and remaining butter to sauce and toss to combine. Transfer to a baking dish and sprinkle with remaining cheese. Broil for 5 mins, or until cheese is melted and browned. Serve with salad.
