Pork Stir Fry With Chili And Basil
- 2 tbsp vegetable oil
- 1 1/2 lbs ground pork
- 1 bunch spring onions, trimmed, halved and cut into 2 inch pieces
- 2 cloves garlic, peeled and thinly sliced
- 1 inch piece ginger, peeled and finely chopped
- 2 None large red chili peppers, deseeded and sliced
- 5 tbsp oyster sauce
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 oz fresh basil, shredded
- 1 oz fresh cilantro, shredded
- None None cooked rice noodles, to serve
- Heat the oil in a large wok or frying pan and add the ground pork. Cook over high heat 6-8 mins, stirring, until browned. Add the spring onion, garlic, ginger and chili pepper. Stir-fry 2-3 mins. Add the oyster and fish sauce, sugar and 6 tbsp water. Bring to a boil, stirring, and simmer 1 min until sauce thickens slightly. Stir in the basil and cilantro and serve with the rice noodles.
