Pork And Bean Hot Pot
- 2 tbsp oil
- 1 1/3 lbs diced pork
- 1 None onion, chopped
- 1 tbsp paprika
- 4 cloves garlic, crushed
- 9 oz green beans
- 1 None carrot, sliced
- 1/2 cup chicken stock
- 1 can (15 oz) cannellini beans, drained and rinsed
- 3 None tomatoes, diced
- None None Cilantro leaves, for garnish
- None None Crusty bread, to serve
- Heat oil in a large skillet on medium-high. Brown pork in batches for 3-4 mins. Remove and set aside.
- Add onion to pan and cook on low heat for 4 mins, stirring, until softened. Add paprika and garlic and cook, stirring, for 1 min.
- Add pork, green beans, carrot and stock. Increase heat to medium-high. Bring to a boil. Reduce heat to low; cover and simmer for 15 mins, or until pork is tender.
- Add cannellini beans and tomatoes and cook for 3-4 mins, until heated through. Season. Spoon into bowls. Garnish with cilantro leaves and serve with bread.
