Crusted Baked Cod With Tomato, Caper And Olive Sauce

  1. Preheat the oven to 350u0b0F. Place bread, Parmesan cheese and basil in food processor and pulse to combine. With motor running, add oil until well incorporated. Season with salt and black pepper.
  2. Place tomato puree, sugar, garlic, capers, oregano and olives in baking dish. Stir to combine. Season with salt and black pepper to taste.
  3. Season fish with salt and black pepper and place on top of sauce. Press breadcrumb mixture over each fillet.
  4. Bake for 20 mins, or until fish is just cooked and breadcrumbs are golden. Remove fish from oven and sprinkle with additional basil. Serve with crusty bread and vegetables or green salad.
