Crusted Baked Cod With Tomato, Caper And Olive Sauce
- 3 oz sourdough or ciabatta bread, torn into pieces
- 2 tbsp finely grated Parmesan cheese
- None None Handful fresh basil leaves, plus additional, for garnish
- 1 tbsp olive oil
- 1 cup tomato puree
- 1 tsp sugar
- 2 cloves garlic, minced
- 1 tbsp baby capers, rinsed
- None None Large handful fresh oregano leaves
- 1/2 cup pitted kalamata olives
- 1 1/3 lbs cod fillets, halved
- None None Crusty bread and steamed vegetables or salad greens, to serve
- Preheat the oven to 350u0b0F. Place bread, Parmesan cheese and basil in food processor and pulse to combine. With motor running, add oil until well incorporated. Season with salt and black pepper.
- Place tomato puree, sugar, garlic, capers, oregano and olives in baking dish. Stir to combine. Season with salt and black pepper to taste.
- Season fish with salt and black pepper and place on top of sauce. Press breadcrumb mixture over each fillet.
- Bake for 20 mins, or until fish is just cooked and breadcrumbs are golden. Remove fish from oven and sprinkle with additional basil. Serve with crusty bread and vegetables or green salad.
