Tomato And Bean Soup
- 1 tbsp olive oil
- 1 None onion, finely chopped
- 1 clove garlic, crushed
- 4 cups vegetable stock
- 1 can (14 oz) diced tomatoes
- 1 tbsp taco seasoning mix
- 1 can (15 oz) pinto beans, drained
- 8 slices bread
- 3/4 cup grated Cheddar cheese
- None None Chives or parsley, to garnish
- Preheat broiler on high. Line broiler with foil.
- Heat olive oil in a large saucepan on high heat. Saute onion and garlic 1-2 mins until onion is tender. Stir in stock, tomatoes and seasoning mix. Simmer 5 min. (Puree tomato mixture, if desired). Stir in beans and season to taste. Simmer 5 mins.
- Meanwhile, arrange bread slices on prepared pan. Broil until toasted on one side. Turn and sprinkle each evenly with cheese.
- Broil 1-2 mins until cheese melts. Serve soup sprinkled with chives or parsley. Accompany with cheese toast.
