Couscous And Carrot Patties With Sesame Salad

  1. Prepare couscous according to package instructions then let cool. Once cool, combine with carrot, ricotta, egg and curry powder and season. Divide into 16 patties. Heat oil in a nonstick frying pan and fry patties, turning, until golden brown, working in batches if necessary.
  2. Meanwhile, mix vinegar with sesame oil and 1-2 tbsp canola oil and season. Toss with cilantro, chili, onion and cucumber. Serve patties on a plate with salad on the side.
