Couscous And Carrot Patties With Sesame Salad
- 200 g couscous
- 100 g carrots, peeled and finely grated
- 200 g ricotta cheese
- 1 None medium egg, beaten
- 1-2 tsp curry powder
- 5-7 tbsp sunflower oil
- 2 None cucumbers
- 2 None chillis, deseeded and cut into thin strips
- 1/2 bunch coriander, leaves removed and chopped
- 1 None red onion, peeled and cut into thin strips
- 3 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- Prepare couscous according to package instructions then let cool. Once cool, combine with carrot, ricotta, egg and curry powder and season. Divide into 16 patties. Heat oil in a nonstick frying pan and fry patties, turning, until golden brown, working in batches if necessary.
- Meanwhile, mix vinegar with sesame oil and 1-2 tbsp canola oil and season. Toss with cilantro, chili, onion and cucumber. Serve patties on a plate with salad on the side.
