Curried Sausages With Sweet Potato And Cauliflower Purée
- 1 lb sweet potatoes, cut into 3/4 inch pieces
- 3/4 lb cauliflower, cut into small florets
- 1 tbsp vegetable or olive oil
- 8 None lean beef sausages
- 1 None medium Spanish onion, finely chopped
- 2 tbsp korma curry paste
- 2 tsp all-purpose flour
- 2.5 oz frozen peas
- 1 1/2 tbsp butter
- 1/3 cup milk
- Steam sweet potatoes for 10 mins. Add cauliflower and steam for another 8 mins, or until tender.
- Meanwhile, heat 1/2 tbsp oil in a large frying pan over medium heat. Add sausages and cook for 8 mins, or until browned. Set aside. Add remaining oil. Saute onion for 4 mins, or until soft. Add curry paste and flour. Cook for 1 min. Gradually whisk in 1 2/3 cups water. Bring to a boil. Return sausages to pan along with peas. Cook, covered, over medium heat for 4 mins, or until sausages are cooked through.
- Drain sweet potatoes and cauliflower. Return to pan along with butter and milk. Using a stick blender, puree until smooth.
- Serve sausages with sweet potato and cauliflower puree.
