Char Grilled Beef Salad
- 1 lb beef rump steak
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 3 None Persian cucumbers, seeded, thinly sliced
- 4 None fresh small red Thai chilies, thinly sliced
- 8 None spring onions, thinly sliced
- 9 oz cherry tomatoes, quartered
- 1/3 cup fresh Vietnamese mint leaves
- 1/2 cup fresh cilantro leaves
- 1 tbsp grated palm sugar
- 1 tbsp soy sauce
- 1 clove garlic, minced
- Combine beef with 2 tbsp fish sauce and 1 tbsp lime juice. Cover and chill for 3 hours, or overnight.
- Drain beef. Cook on a heated, oiled grill plate (or grill) until browned and cooked to your liking. Cover beef and let rest for 5 mins. Slice thinly.
- Meanwhile, combine cucumber, chilies, onions, tomatoes and herbs in a large bowl. Combine remaining fish sauce and lime juice with sugar, soy sauce and garlic and whisk to combine. Pour over salad. Add beef and toss to combine.
