Leek And Cauliflower Cheese

  1. Preheat the oven to 375u0b0F. Cook the cauliflower in lightly salted boiling water for 4-5 mins until just tender. Drain. Transfer to a shallow baking dish.
  2. Cook the bacon in a medium saucepan until crisp. Sprinkle over the cauliflower.
  3. Wipe saucepan clean. Heat the butter and oil in the pan on low heat. Stir in the leek. Cover and cook for 6-7 mins. Add the flour and nutmeg. Cook, stirring, for 1 min. Remove from the heat. Gradually stir in the milk. Return to the heat; stir until the sauce boils and thickens. Add the mustard and season. Spoon the sauce over the cauliflower. Sprinkle with grated cheese.
  4. Bake for 20-25 mins until golden. Serve hot with warm crusty bread.
