Anita'S Blend Of The Bayou
- 1 (8 oz.) pkg. cream cheese
- 1 stick oleo
- 2 1/2 lb. shrimp, peeled and deveined
- 2 onions, chopped
- 2 bell peppers, chopped
- 1 stick oleo (saute vegetables)
- 10 ribs celery, chopped
- 1 can golden mushroom soup
- 1 lb. Velveeta cheese, grated, sliced or chopped (for top of casserole)
- 1 lb. fresh mushrooms, sliced
- 2 Tbsp. garlic powder
- 2 or more tsp. red pepper (hot to taste)
- 1 pt. crab meat (optional)
- 4 c. cooked rice
- 1 c. cracker meal or cracker crumbs (approximately)
- Melt cream cheese and 1 stick oleo in microwave.
- Saute shrimp and vegetables in 1 stick of oleo.
- Add to first mixture.
- Add golden mushroom soup, seasoning and rice; mix well.
- Place in 9 x 13-inch casserole dish.
- Top with cheese and cracker meal or crumbs.
- Bake at 350u0b0 for about 20 to 30 minutes until bubbly hot. Serves 10 to 12 people.
