Crunch Top Banana Loaf
- 2 c. rice cereal squares
- 3/4 c. chopped pecans
- 2 Tbsp. brown sugar
- 1 Tbsp. melted margarine
- 1/2 c. margarine
- 1/2 tsp. baking soda
- 1 c. sugar
- 1 egg
- 2 tsp. baking powder
- 2 c. flour
- 1 c. mashed ripe banana
- 1/2 c. buttermilk or sour milk
- Crush cereal with rolling pin to make 1 cup crumbs.
- Combine 1/4 cup cereal crumbs and 1/4 cup pecans, brown sugar and 1 teaspoon melted margarine; set aside.
- Cream the margarine and sugar until fluffy.
- Add egg, banana and buttermilk; mix well. Stir together flour, baking powder, baking soda and 1/4 teaspoon salt.
- Add to creamed mixture; mix well.
- Fold in remaining cereal crumbs and nuts.
- Turn into greased 9 x 5 x 3-inch loaf pan. Sprinkle reserved crumb mixture on top.
- Bake at 350u0b0 for 55 to 60 minutes.
- Cool 10 minutes; remove from pan and cool completely. Makes 1 loaf.
