Crunch Top Banana Loaf

  1. Crush cereal with rolling pin to make 1 cup crumbs.
  2. Combine 1/4 cup cereal crumbs and 1/4 cup pecans, brown sugar and 1 teaspoon melted margarine; set aside.
  3. Cream the margarine and sugar until fluffy.
  4. Add egg, banana and buttermilk; mix well. Stir together flour, baking powder, baking soda and 1/4 teaspoon salt.
  5. Add to creamed mixture; mix well.
  6. Fold in remaining cereal crumbs and nuts.
  7. Turn into greased 9 x 5 x 3-inch loaf pan. Sprinkle reserved crumb mixture on top.
  8. Bake at 350u0b0 for 55 to 60 minutes.
  9. Cool 10 minutes; remove from pan and cool completely. Makes 1 loaf.
