Chard And Blue Cheese Fritatta

  1. Preheat oven to 325u0b0F. Lightly grease a 9 inch pie pan.
  2. Heat oil in a large frying pan on medium. Saute onion for 1 minute. Stir in chard. Cook, covered, for 3-4 minutes, until wilted. Drain excess liquid.
  3. In a bowl, whisk together eggs, blue cheese, flour, nutmeg and lemon rind. Stir in chard and onion. Season to taste. Pour mixture into prepared pie pan. Bake for 15-20 minutes, until set.
  4. Meanwhile, warm pasta sauce in a saucepan on medium. Serve frittata with sauce and salad.
