Chard And Blue Cheese Fritatta
- 1 tbsp olive oil
- 1 None onion, finely sliced
- 1 lb chard, stalks trimmed and finely chopped
- 6 None large eggs
- 3.5 oz blue cheese, crumbled
- 1/4 cup self-rising flour
- 1 tsp ground nutmeg
- 1 None lemon, finely grated rind
- 1 x 14 oz can tomato pasta sauce
- None None Salad, to serve
- Preheat oven to 325u0b0F. Lightly grease a 9 inch pie pan.
- Heat oil in a large frying pan on medium. Saute onion for 1 minute. Stir in chard. Cook, covered, for 3-4 minutes, until wilted. Drain excess liquid.
- In a bowl, whisk together eggs, blue cheese, flour, nutmeg and lemon rind. Stir in chard and onion. Season to taste. Pour mixture into prepared pie pan. Bake for 15-20 minutes, until set.
- Meanwhile, warm pasta sauce in a saucepan on medium. Serve frittata with sauce and salad.
