Pork Escalopes In Tomato Gratin
- 2 (13.5 oz) cans plum tomatoes
- 2 tbsp tomato paste
- 1 lb broccoli, cut into small florets
- 2 tbsp vegetable oil
- 8 (2 oz) thin pork loins or escalopes
- 4.5 oz mozzarella cheese, roughly diced
- 2-3 None fresh basil leaves, for garnish
- Preheat oven to 400u0b0F. Combine tomatoes and tomato paste and puree using a stick blender. Bring to a boil and simmer for 10 mins. Season and add a pinch of sugar. Transfer to a baking dish.
- Meanwhile, cook broccoli in boiling salted water for 5 mins. Drain, cool under cold running water and drain.
- Heat oil in a frying pan, add pork and saute for 1 min per side. Transfer to baking dish along with broccoli. Sprinkle mozzarella over top then bake for about 15 mins, until cheese has browned. Garnish with basil leaves.
