Salt And Pepper Tofu

  1. In a bowl combine the flour, salt, chili and pepper. Add the tofu and coat in the seasoned flour.
  2. Heat 1/4 cup of rice bran oil in a wok over high heat. Cook the tofu for 5 mins in batches, turning, until golden. Drain on paper towels.
  3. Wipe out the wok. Heat the remaining oil over medium heat. Saute the garlic and cashews for 2-3 mins, until golden. Add the vegetables and cook for 3-5 mins more, until tender. Finally, stir in the tofu. Serve drizzled with soy sauce.
