Salt And Pepper Tofu
- 1/4 cup all-purpose flour
- 2 tsp sea salt
- 1 tsp chili flakes
- 1/2 tsp ground black pepper
- 1/3 cup rice bran oil
- 1 lb firm tofu, drained and cubed
- 4 cloves garlic, peeled and finely sliced
- 2.5 oz cashews
- 1 bunch choy sum (can substitute bok choy)
- 4 None yellow squash, cut into sixths
- 2 tbsp soy sauce, to serve
- In a bowl combine the flour, salt, chili and pepper. Add the tofu and coat in the seasoned flour.
- Heat 1/4 cup of rice bran oil in a wok over high heat. Cook the tofu for 5 mins in batches, turning, until golden. Drain on paper towels.
- Wipe out the wok. Heat the remaining oil over medium heat. Saute the garlic and cashews for 2-3 mins, until golden. Add the vegetables and cook for 3-5 mins more, until tender. Finally, stir in the tofu. Serve drizzled with soy sauce.
