Potato Soup For A Crowd

  1. Combine potatoes, celery, onions, parsley and water.
  2. Simmer 30 minutes.
  3. In another saucepan, melt butter and stir in a little flour.
  4. Add in a small amount of liquid from potato mixture to form a paste.
  5. Cool and stir in half and half and seasonings. When vegetables are cooked, mash and add milk mixture.
  6. Stir constantly; do not boil.
  7. Garnish with bacon.
  8. Serve in bread bowls.
