Potato Soup For A Crowd
- 8 qt. raw potatoes, peeled and diced
- 10 c. sliced celery
- 10 c. onions, chopped
- 10 Tbsp. parsley, chopped
- 5 c. water
- 2 1/2 c. butter
- 3 1/2 Tbsp. instant chicken bouillon granules
- 3 Tbsp. salt
- 2 1/2 tsp. pepper
- 2 1/2 qt. half and half
- flour to thicken
- 1 lb. bacon, cooked crisp and crumbled
- Combine potatoes, celery, onions, parsley and water.
- Simmer 30 minutes.
- In another saucepan, melt butter and stir in a little flour.
- Add in a small amount of liquid from potato mixture to form a paste.
- Cool and stir in half and half and seasonings. When vegetables are cooked, mash and add milk mixture.
- Stir constantly; do not boil.
- Garnish with bacon.
- Serve in bread bowls.
