Bacon And Cheese Meatloaf
- 2 1/4 lb ground beef
- 2 None carrots, grated
- 1 None red onion, finely chopped
- 1 cup fresh breadcrumbs
- 10 slices bacon, 2 slices chopped
- 1 None large egg, lightly beaten
- 2 tbsp barbecue sauce
- 1 tbsp chopped fresh rosemary
- 3.5 oz Cheddar cheese, cubed
- None None salad and French fries, to serve
- Preheat oven to 400u0b0F. Line a large, rimmed baking tray with parchment paper.
- In a large bowl, combine ground beef, carrots, onion, breadcrumbs, chopped bacon, egg, barbecue sauce and rosemary. Season to taste.
- Arrange remaining bacon on prepared tray, slightly overlapping. Spoon meatloaf mixture down the center of bacon and shape into an 8 inch log. Press cheese cubes evenly into mixture. Fold bacon over to enclose and secure with toothpicks. Roll over so the seam-side is facing down. Bake for 45-50 mins, or until cooked through, basting halfway through with cooking juices. Loosely cover with foil and let rest for 10 mins.
- Remove toothpicks and slice. Serve with salad and French fries.
