Vietnamese Lamb Riblets

  1. Place onion, garlic and 2 tbsp sugar in a food processor. Blend to a smooth paste. Add 2 tbsp fish sauce and soy sauce. Season. Place lamb riblets in a shallow dish and pour marinade over top. Coat thoroughly. Cover and chill for 1 hour.
  2. Meanwhile, to make the Vietnamese dipping sauce, combine remaining fish sauce and brown sugar with chili and lime juice. Process with 1/3 cup water in a food processor until smooth. Set aside.
  3. Preheat grill. Cook lamb riblets over high heat for 12-15 mins, turning frequently, or until cooked to your liking.
