Baked Salmon With Spinach And Ricotta Almond Cream

  1. Preheat the oven to 350u0b0F. Mix together the ricotta, almonds, garlic, Parmesan and egg. Season with salt and pepper. Make a horizontal cut in the salmon, but don't separate the 2 halves.
  2. Spread all but 3 tbsp of the ricotta mixture inside the salmon, along with half the spinach. Spread the remaining ricotta on top, then layer remaining spinach leaves on top. Tie together with kitchen twine and place in a greased ovenproof dish. Drizzle with olive oil and season with salt and pepper. Bake for 25-30 mins. Serve with the pan juices.
