Tomato And Goat Cheese Snacks
- 4 None tomatoes, sliced
- 4 stalks thyme
- 1 tbsp sugar
- 1 dash olive oil
- 30 g butter
- 60 g small salted crackers, crushed
- 8 blades chives, chopped
- 150 g goat's cream cheese
- 120 g full fat cream cheese
- 1 pinch paprika
- Preheat oven to 200u0b0F. Place the sliced tomato on a baking sheet lined with parchment. Distribute thyme stems evenly over tomatoes and sprinkle with sugar. Drizzle a little olive oil over each. Cook for 2 hours. Allow to cool, then remove the thyme stalks.
- Gently melt the butter in a pan, then mix in the crushed crackers. Press the cracker mixture firmly into the bottom of 6 baking rings (each about 2 inches in diameter) on individual plates.
- Mix the cheeses together with a fork, season to taste and fold in the chopped chives, retaining some for the garnish.
- To construct the stack, start by placing a layer of tomatoes on top of the cracker base. Next, spread a layer of the cheese mixture, and repeat, finishing with a tomato layer. Return to the refrigerator and chill for at least 2 hours. When ready to serve, remove the stacks from the rings and garnish with chives.
