Zesty Mexican Chicken
- 1 bag Doritoes cheese tortilla chips, crunched in bag
- 2 boneless skinless chicken breast, boiled and separated
- 1 can stems & pieces mushrooms, or fresh mushrooms, sauteed in butter
- 1 small can sliced black olives, optional
- 1 can Ro-tel tomatoes
- 1 can cream of mushroom
- 1 can cream of chicken
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 block sharp cheddar cheese, shredded
- 1/2 block mozzarella cheese, shredded
- Topping: 1/2 cup both cheeses for topping
- Boil chicken until cooked thoroughly, cool and separate. Preheat oven to 425u0b0. In a large casserole dish, combine all ingredients and mix well. Sprinkle top with 1/2 cup of both cheeses and bake for about 30 minutes or until cheese is melted.
