Angel Hair Pasta With Broccoli And Almonds
- 1 lb angel hair spaghetti
- 1 None head broccoli, cut into small florets
- 1/4 cup olive oil, plus extra to serve
- 4 cloves garlic, finely chopped
- 1 None long red chili, seeded, chopped
- 1 cup grated parmesan
- 1/2 cup sliced almonds, toasted
- Cook spaghetti in a large saucepan of boiling salted water, following packet instructions, until al dente. Add broccoli to cooking water 2 minutes before end of cooking time. Drain, reserving 1/2 cup cooking water.
- Meanwhile, heat oil in a large frying pan on medium. Saute garlic and chili 1-2 minutes, until golden, being careful not to burn.
- Add broccoli, pasta and reserved water to pan. Toss well. Remove from heat. Toss with parmesan and almonds, and season to taste. Drizzle the spaghetti with a little extra-virgin olive oil and sprinkle with a little extra parmesan before serving.
