Vegetable And Chickpea Fritters
- 8 oz chickpea (besan) flour
- 1 None large zucchini, coarsely grated
- 1 None large Spanish onion, coarsely grated
- 1 None large carrot, peeled, coarsely grated
- 4 oz frozen peas and sweet corn mix
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp garam marsala
- 1/2 tsp baking powder
- 2 tbsp coarsely chopped fresh cilantro leaves
- None None vegetable oil, for shallow-frying
- 3/4 cup yogurt
- Combine chickpea flour, vegetables, garlic, spices, baking powder and 1/4 cup water in a medium bowl. Mix in cilantro then shape into 16 fritters.
- Working in batches, shallow-fry fritters until browned and cooked through. Drain on paper towels and season.
- Serve fritters with yogurt.
