Apple Brownies
- 1.8 kg apples, peeled, cored and chopped
- 4-5 tbsp lemon juice
- 400 g dark chocolate, coarsely chopped
- 250 g butter
- 250 g walnuts, coarsely chopped
- 325 g plain flour
- 2 tsp baking powder
- 7 None eggs, beaten
- 350 g caster sugar
- 1 tbsp vanilla sugar
- Pinch None salt
- 25 g solidified coconut oil, coarsely chopped
- 100 g whipping cream
- Preheat oven to 350u0b0F. Toss the chopped apples in lemon juice and set aside. Melt the butter and 10 oz chocolate in a small saucepan over low heat, stirring. Remove from the heat and allow to cool 5-10 mins. Pour the cooled chocolate into a large mixing bowl, add the sugar, vanilla sugar, 1 pinch salt, eggs, 1 3/4 cups walnuts, flour and baking powder. Beat until mixture is smooth, then pour into a greased cake pan.
- Distribute apples evenly on top of the mixture. Sprinkle with remaining walnuts. Bake for 40-45 mins. Then allow to cool for 2-3 hours on a wire rack.
- To decorate, melt the remaining chocolate with the coconut oil and cream over low heat, stirring. Allow to cool for 15 mins, then drizzle over the cake. Leave for 2 hours to set.
