Spicy Chicken And Corn Bake
- 12 small potatoes, peeled
- 3 tbsp olive oil
- 1/2 tsp paprika
- 1 tsp ground cumin
- 1 tbsp chilli flakes
- 12 rashers streaky bacon
- 1 None red pepper, deseeded and cut into strips
- 250 g shallots, peeled and halved
- 1 None green jalapeno chilli, deseeded and roughly chopped
- Cook the potatoes in boiling water for 20 mins until tender. Drain and set aside to cool.
- Preheat the oven to 400u0b0F. Mix together the oil, paprika, cumin and crushed red pepper with a pinch of salt. Rub the mixture onto the chicken drumsticks. Transfer to a large baking dish or 2 smaller ones. Bake for 15 mins.
- Meanwhile, wrap the potatoes in the bacon. Add them, along with the pepper strips, corn, shallots, and jalapeno to the chicken and cook for an additional 20-25 mins.
