Smoked Fish Pie
- 1 lb potatoes, peeled, chopped
- 3 1/2 tbsp butter, cubed
- 1 cup heavy cream or half-and-half, 1/2 cup warmed
- 5 None large eggs
- 1 pinch grated nutmeg
- 1 None lemon, zested
- 9 oz smoked fish, bones removed, flaked
- 2 None spring onions, thinly sliced
- 2 tbsp chopped fresh dill
- None None lemon wedges and green salad, to serve
- Place potatoes in a saucepan of salted water. Bring to a boil then reduce heat and simmer for 15 mins, or until tender.
- Preheat oven to 400u0b0F. Drain potatoes then pass through a ricer or mash well. Add butter and warmed cream and beat until combined. Season to taste.
- Beat eggs and remaining cream together. Add nutmeg and lemon zest. Fold in fish, spring onions and dill. Season to taste. Spoon into 4 small pie dishes or ramekins.
- Fill a piping bag with hot mashed potatoes. Pipe potatoes on top of pies. Bake for 20 mins, or until golden brown. Serve with lemon wedges and green salad.
