Poached Turkey With Tuna Mayonnaise

  1. In a large pot, combine turkey, carrot, celery, onion, parsley and bay leaf. Add enough water to just cover. Bring to a boil, cover and simmer for 30 mins. Remove from heat and let turkey cool in liquid, covered.
  2. Meanwhile, to make the tuna mayonnaise, combine tuna, anchovies, 1 oz capers and 2 tbsp cold turkey cooking liquid in a food processor. Puree until smooth. Mix with mayonnaise and lemon juice. Season.
  3. Thinly slice turkey and arrange on a serving platter. Spoon tuna mayonnaise over top and sprinkle with remaining capers and lemon zest. Garnish with watercress.
