Banana Cake With Cream Cheese Frosting
- 1/2 cup butter, chopped, at room temperature
- 2/3 cup brown sugar
- 2 None eggs
- 1/2 lb very ripe banana, mashed
- 3/4 cup sour cream
- 1/2 cup self-rising flour
- 1 tsp baking soda
- 1 tbsp milk
- 1/4 lb cream cheese, at room temperature
- 3/4 cup powdered sugar
- Preheat oven to 350u0b0F. Lightly grease and line an 8 inch cake pan with parchment paper. Cream butter and sugar until light and fluffy. Beat in eggs, 1 at a time, until combined. Fold in banana and sour cream Sift flour and baking soda together then fold in. Add milk. Transfer to prepared pan and bake for 55-60 mins, until a skewer comes out clean. Let cool for 5 mins in pan before transferring to a wire rack to cool completely.
- To make frosting, beat cream cheese and powdered sugar until smooth. Spread over cooled cake.
