Lemon Delicious Pudding Cakes
- 4 tbsp (1/2 stick) butter, softened
- 1 cup granulated sugar
- 1/4 cup self-rising flour
- 2 None lemons, peel finely grated
- 2/3 cup lemon juice
- 2/3 cup milk
- 3 None eggs, separated
- None None Powdered sugar, to dust
- None None Whipped cream, to serve
- Preheat the oven to 350u0b0F. Lightly grease four 1-cup ramekins.
- Beat butter and granulated sugar in a large bowl with an electric mixer until combined. Mix in flour and lemon peel.
- Whisk lemon juice, milk and egg yolks in a medium bowl. Fold into butter mixture.
- Beat egg whites in a clean medium bowl with an electric mixer until soft peaks form. Gently fold into batter. Divide batter evenly among ramekins.
- Place ramekins in a large baking dish. Pour in enough hot water into baking dish to come halfway up the sides of ramekins.
- Bake, uncovered, 20-25 mins, until firm. Dust with powdered sugar and serve with whipped cream.
