Lemon Delicious Pudding Cakes

  1. Preheat the oven to 350u0b0F. Lightly grease four 1-cup ramekins.
  2. Beat butter and granulated sugar in a large bowl with an electric mixer until combined. Mix in flour and lemon peel.
  3. Whisk lemon juice, milk and egg yolks in a medium bowl. Fold into butter mixture.
  4. Beat egg whites in a clean medium bowl with an electric mixer until soft peaks form. Gently fold into batter. Divide batter evenly among ramekins.
  5. Place ramekins in a large baking dish. Pour in enough hot water into baking dish to come halfway up the sides of ramekins.
  6. Bake, uncovered, 20-25 mins, until firm. Dust with powdered sugar and serve with whipped cream.
