Veal Goulash With Fettuccine
- 2 tbsp olive oil
- 2 lbs veal, diced
- 1 None onion, chopped
- 1 None carrot, diced
- 2 cloves garlic, crushed
- 1 tbsp sweet paprika
- 2 tbsp tomato paste
- 1 cup beef stock
- 11 oz fresh fettuccine
- None None Sour cream, to serve
- Heat half the oil in a large, heavy-bottomed saucepan on medium-high heat. Cook veal in batches for 3-4 mins, until browned. Remove from pan.
- Heat remaining oil in same pan on low heat. Saute onion, carrot and garlic for 5 mins, until soft and lightly golden.
- Stir in paprika and cook for 1 min. Add tomato paste, stock and veal. Bring to a boil on high heat. Reduce heat to low; simmer, covered, for 1 1/2 hours. Uncover for last 15 mins to thicken sauce.
- Cook fettuccine according to package directions. Drain well. Serve topped with veal goulash and sour cream.
