Baked Duck With Mushroom Rice

  1. Pick and wash duck thoroughly.
  2. Rub 1/2 dry soup mix inside duck.
  3. Stuff onion inside duck.
  4. Rub rest of soup mix on outside of duck.
  5. Lay duck on heavy-duty tinfoil and cover.
  6. Place in pan and bake slowly (approximately 300u0b0) until duck is tender (2 to 3 hours).
  7. Approximately 1 hour before duck is done, combine mushrooms, rice and soup in baking dish and bake at 300u0b0 for 1 hour.
  8. When duck is cool, remove meat from bone and add to rice mixture.
  9. Salt and pepper to taste.
  10. Return to oven for approximately 15 minutes to combine flavors.
