Baked Duck With Mushroom Rice
- 1 mallard duck
- 1 large onion, sliced into chunks
- 1 envelope French onion dry soup mix
- 2 c. brown rice
- 2 small cans mushroom
- 1 can French onion soup
- salt
- pepper
- Pick and wash duck thoroughly.
- Rub 1/2 dry soup mix inside duck.
- Stuff onion inside duck.
- Rub rest of soup mix on outside of duck.
- Lay duck on heavy-duty tinfoil and cover.
- Place in pan and bake slowly (approximately 300u0b0) until duck is tender (2 to 3 hours).
- Approximately 1 hour before duck is done, combine mushrooms, rice and soup in baking dish and bake at 300u0b0 for 1 hour.
- When duck is cool, remove meat from bone and add to rice mixture.
- Salt and pepper to taste.
- Return to oven for approximately 15 minutes to combine flavors.
