Turkey Schnitzel Pizzaiola
- 2 cloves garlic, peeled and pressed
- 4 tsp lime juice
- 1 lb turkey cutlets, sliced
- 2 tbsp olive oil
- 1 None onion, peeled and cut into thin wedges
- 1 tbsp tomato puree
- 1/2 lb tomatoes, diced
- 1 cup vegetable stock
- 2 tbsp black olives, sliced
- 1 stalks rosemary
- 2 stalks basil, chopped
- 8 oz tagliatelle
- None None lime slices and fresh herbs for garnish
- Mix the garlic and 3 tsp lime juice and apply to turkey cutlets as a marinade.
- Heat 1 tbsp of olive oil and saute the onion briefly. Stir in the tomato puree, add the tomatoes and season to taste. Pour in the stock, add the olives, rosemary and basil and simmer for about 10 mins. Add 1 tsp lime juice.
- Cook the tagliatelle in boiling salted water for about 8 mins.
- Heat 1 tbsp of olive oil and fry turkey cutlets for about 2 mins on each side. Season to taste. Serve the pasta, turkey and sauce, garnished with slices of lime and fresh herbs.
