Smoked Ham With Creamy Cabbage And Bacon
- 3 tbsp sunflower oil
- 1/4 lb sliced bacon
- 1 None Savoy Cabbage, trimmed and thinly sliced
- Pinch None grated nutmeg
- 1 1/8 cup vegetable stock
- 1 tbsp butter
- 3 tbsp all-purpose flour
- 1/2 cup milk
- 2 None red onions, sliced into rings
- 4 None thick slices of smoked ham
- Heat 1 tbsp oil in a saucepan, add the bacon and fry for 3-4 mins. Add the cabbage and saute for 2-3 mins. Then season and stir in the nutmeg and 2/3 cup vegetable stock. Simmer for 15-20 mins, until tender.
- Meanwhile, melt the butter in a separate saucepan, stir in the flour until smooth then gradually stir in 1/2 cup of stock and the milk. Bring to a boil then simmer, stirring, for 4-5 mins until thickened. Mix into the cabbage and keep warm.
- Coat the onions in 2 tbsp flour and tap off any excess. Heat 1 tbsp oil in a frying pan, add the onions and saute for 3-5 mins until crisp, then remove from the pan and keep warm.
- Add 1 tbsp oil to the pan, followed by the slices of ham. Fry for 4-6 mins, turning, until cooked through. To serve, divide the cabbage between 4 plates, place a slice of ham on top and drizzle with extra sauce.
