Braided Brioche Loaf
- 1 cup + 1 tsp skim milk
- 1/2 tsp dry active yeast
- 1 tsp honey
- 3 1/3 cup all purpose flour
- 1 tsp salt
- 3 tbsp butter
- 1 None egg, beaten
- 1 None egg yolk
- Combine 2/3 cup lukewarm milk, yeast, and honey in a small bowl and mix to combine. Set aside for 10 minutes.
- Combine flour and salt in a large bowl and mix with a wooden spoon. Make a well in the middle of the flour. Pour the milk mixture into the well and stir until combined. Cover and set aside for 15 minutes to rise.
- Meanwhile, melt the butter and combine with 1/3 cup of milk. Add butter mixture and the beaten egg to the dough and knead until smooth. Cover, and let rest in a warm place for 45 minutes, or until doubled in size.
- Preheat oven to 400u0b0F. Turn dough onto lightly floured surface and cut into 3 equal pieces. Roll each piece to form a rope about 18 inches long. Set ropes side by side and press together at one end. Braid ropes loosely and press ends together. Place on a greased cookie sheet and cover. Leave brioche in a warm place for 30 minutes to rise.
- Mix the egg yolk with 1 tsp milk and brush over the brioche. Bake on the middle rack for 30 minutes. After 15-20 minutes cover with foil to prevent burning. Let brioche cool on a wire rack.
