Homemade Fig Newtons

  1. To make the filling, in a food processor, combine dried fruit, sugar, marsala and spices. Pulse until mixture is combined. Set aside.
  2. Combine flour and sugar. Cut in butter until mixture resembles breadcrumbs. Whisk together egg yolks, 1 tbsp ice water and vanilla. Add to butter mixture to make a firm but pliable dough. Knead lightly. Wrap in plastic wrap and chill for 30 mins.
  3. Preheat oven to 350u0b0F. Lightly grease and line a 7x11 inch rimmed baking tray with parchment paper.
  4. Cut pastry dough in half. Roll out each portion between 2 sheets of baking paper. Ease one half into prepared pan and spread evenly with fruit mixture. Cover with remaining dough. Sprinkle with sugar. Bake for 40-45 mins, until golden. Let cool in pan on a wire rack. Cut into squares.
