Homemade Fig Newtons
- 1/2 cup raisins
- 1/2 cup dried figs, chopped
- 1/4 cup dark brown sugar
- 1 tbsp marsala
- 2 tsp ground allspice
- 1/2 tsp ground cloves
- 2 1/4 cups all-purpose flour, sifted
- 1/3 cup granulated sugar, plus extra to sprinkle
- 1 1/4 cups butter, chilled, chopped
- 2 None egg yolks
- 1/2 tsp vanilla extract
- To make the filling, in a food processor, combine dried fruit, sugar, marsala and spices. Pulse until mixture is combined. Set aside.
- Combine flour and sugar. Cut in butter until mixture resembles breadcrumbs. Whisk together egg yolks, 1 tbsp ice water and vanilla. Add to butter mixture to make a firm but pliable dough. Knead lightly. Wrap in plastic wrap and chill for 30 mins.
- Preheat oven to 350u0b0F. Lightly grease and line a 7x11 inch rimmed baking tray with parchment paper.
- Cut pastry dough in half. Roll out each portion between 2 sheets of baking paper. Ease one half into prepared pan and spread evenly with fruit mixture. Cover with remaining dough. Sprinkle with sugar. Bake for 40-45 mins, until golden. Let cool in pan on a wire rack. Cut into squares.
