Poached Pears With Low-Fat Lemon Cream
- 1 None cinnamon stick
- None None zest of 1 lemon
- 1 cup white wine
- 3/4 cup sugar
- 4 None pears, peeled and seeds removed
- 1 lb cottage cheese or farmer's cheese
- 3 tbsp cranberry sauce
- 4 tbsp caramel sauce
- Place 2 cups water, the cinnamon stick, half the lemon zest, the wine and 1/2 cup sugar in a saucepan. Bring to a boil and simmer for 4-5 mins. Place the pear halves into the liquid and gently cook for 3-5 mins.
- Meanwhile, mix the cottage cheese, 2 tbsp sugar and a pinch of lemon zest. Place mixture in the fridge.
- Remove the pears from the poaching liquid and leave to cool.
- Melt the remaining sugar in a saucepan and leave to turn golden. Pull threads of sugar using a fork to form small bundles as they dry. Leave them to dry on wax paper. Arrange the pears on 4 plates and add the lemon cream. Drizzle with cranberry sauce and caramel sauce and decorate with a sugar bundle. Serve.
