Cookies And Cream Cheesecakes
- 10.5 oz Oreos, 8 kept whole, remaining chopped into quarters
- 2 tsp powdered gelatin, bloomed in 2 tbsp water
- 13.5 oz cream cheese, softened
- 1 tsp vanilla extract
- 1/2 cup granulated sugar
- 1 1/4 cups heavy cream
- 6 oz white chocolate, melted
- 2 oz dark chocolate, melted
- Stand 8 cleaned 4 inch pieces of PVC pipe on a baking tray. Grease each pipe and line with parchment paper. Place 1 Oreo in each pipe.
- To make the filling, gently melt bloomed gelatin in a small saucepan. Let cool for 5 mins. Beat cheese, vanilla extract and sugar until smooth. Beat in cream then stir in white chocolate, gelatin and chopped Oreos. Distribute filling between pipes and chill overnight.
- Remove pipes and paper from cheesecakes. Serve topped with melted dark chocolate.
