White Chocolate Mocha Stacks

  1. Melt the white and milk chocolate in two separate bowls over pans of simmering water. Use white chocolate to make twelve 2 1/2 inch discs on a parchment paper-lined baking sheet.
  2. Spoon milk chocolate into paper piping bag and pipe lines on top of the white chocolate. Swirl with a skewer to give a marbled effect. Chill until set.
  3. For the filling, whisk together coffee and cream until soft peaks form. Stir egg yolks into melted chocolate. Whisk whites until they form soft peaks. Add a spoonful of egg whites into chocolate mixture and stir to combine. Fold in remaining egg whites. Chill for about 20 mins until film.
  4. Sandwich spoonfuls of mousse between marbled chocolate discs and dust with cocoa powder. Serve immediately or chill for up to 2 hours.
