White Chocolate Mocha Stacks
- 10 oz white chocolate
- 1.75 oz milk chocolate
- None None Filling
- 1 tbsp instant coffee granules, dissolved in 2 tbsp boiling water
- 2/3 cup heavy cream
- 2 None medium eggs, separated
- 10 oz milk chocolate, melted
- None None Cocoa powder, to dust
- Melt the white and milk chocolate in two separate bowls over pans of simmering water. Use white chocolate to make twelve 2 1/2 inch discs on a parchment paper-lined baking sheet.
- Spoon milk chocolate into paper piping bag and pipe lines on top of the white chocolate. Swirl with a skewer to give a marbled effect. Chill until set.
- For the filling, whisk together coffee and cream until soft peaks form. Stir egg yolks into melted chocolate. Whisk whites until they form soft peaks. Add a spoonful of egg whites into chocolate mixture and stir to combine. Fold in remaining egg whites. Chill for about 20 mins until film.
- Sandwich spoonfuls of mousse between marbled chocolate discs and dust with cocoa powder. Serve immediately or chill for up to 2 hours.
