Fragrant Kaffir Lime Chicken Salad

  1. Combine fish sauce, lime juice and sugar in a small bowl; stir to dissolve the sugar. Set aside.
  2. Heat 1/2 the oil in a large wok or skillet on high heat. Stir-fry chicken, in 2 batches, for 2-3 mins each batch, until golden. Remove from wok and set aside.
  3. Return wok to a high heat. Add remaining oil, ginger and chili pepper; stir-fry for 30 seconds. Add onions and kaffir lime leaves; stir-fry for 30 seconds.
  4. Return chicken to wok with fish sauce mixture; toss to combine. Remove from heat; stir in cilantro. Cool slightly.
  5. Arrange lettuce leaves on a platter and spoon in chicken mixture. Garnish with additional kaffir lime leaves.
