Fragrant Kaffir Lime Chicken Salad
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 2 tsp brown sugar
- 1 tbsp peanut oil
- 14 oz boneless skinless chicken breasts, finely chopped
- 2 tsp grated fresh ginger
- 1 None red chili pepper, seeded and finely chopped
- 4 None green onions, sliced
- 4 None fresh kaffir lime leaves, finely shredded, plus additional, for garnish
- 2 tbsp chopped cilantro
- 8 small Romaine lettuce leaves
- Combine fish sauce, lime juice and sugar in a small bowl; stir to dissolve the sugar. Set aside.
- Heat 1/2 the oil in a large wok or skillet on high heat. Stir-fry chicken, in 2 batches, for 2-3 mins each batch, until golden. Remove from wok and set aside.
- Return wok to a high heat. Add remaining oil, ginger and chili pepper; stir-fry for 30 seconds. Add onions and kaffir lime leaves; stir-fry for 30 seconds.
- Return chicken to wok with fish sauce mixture; toss to combine. Remove from heat; stir in cilantro. Cool slightly.
- Arrange lettuce leaves on a platter and spoon in chicken mixture. Garnish with additional kaffir lime leaves.
