Tandoori Lamb Patties With Yogurt Sauce
- 2 None small onions, finely chopped
- 1 lb lean ground lamb
- 1 tbsp tandoori paste
- 10.5 oz basmati rice
- 1 1/4 cups low-fat yogurt
- 1/2 cup chopped fresh cilantro leaves
- 10.5 oz green beans, trimmed
- Lightly coat a frying pan with oil and place over medium heat. Sweat onions for 3 mins, stirring, until soft. Transfer to a medium mixing bowl and let cool slightly. Add ground lamb and tandoori paste. Season then shape into 12 patties.
- Meanwhile, cook rice in boiling salted water until tender. Drain and keep warm.
- Oil a frying pan and place over medium heat. Cook lamb patties for 3 mins per side, or until cooked through.
- To make the sauce, combine yogurt and cilantro in a small bowl. Season to taste.
- Blanch green beans in boiling salted water for 3 mins, until tender but still crisp. Serve lamb patties with rice, beans and yogurt sauce.
