Marinated Cheese

  1. In a bowl, mix the cheese with the onions, chives, vinegar and 100 ml of oil. Season with pepper. Transfer to a sealable jar and refrigerate.
  2. Leaving a little unchopped for garnish, strip the remaining rosemary needles and chop finely. In a bowl, mix the mozzarella, pine nuts, olives, garlic, 100 ml oil and the rosemary. Season with salt and pepper. Transfer to a jar and refrigerate.
  3. Both types of cheese need at least 2 hours to marinate. Check seasoning just before serving. Serve garnished with the rosemary sprig with crusty bread or as pre dinner nibbles.
