Vegetarian Fried Rice
- 2 tbsp peanut oil
- 2 None eggs, lightly beaten
- 2 cloves garlic, minced
- 2 tsp finely grated fresh ginger
- 26 oz cooked rice
- 1 lb leftover vegetables, diced
- 2.5 oz frozen peas
- 1/3 cup sweet chili sauce
- 1/4 cup soy sauce
- 3 None spring onions, finely sliced
- Heat 2 tsp peanut oil in a wok over high heat. Add eggs and swirl to coat wok. Cook until just set then remove from wok and let cool slightly. Roll up and slice.
- Add remaining oil to wok and stir-fry garlic and ginger over high heat for 1 min, or until fragrant. Add rice and vegetables. Stir-fry for 2-3 mins, until peas are tender. Add sweet chili sauce and soy sauce. Stir-fry for 1-2 mins, until heated through.
- Serve rice topped with omelette and sprinkled with spring onions.
