Chow Mein
- 1 tbsp peanut oil
- 1 lb ground turkey
- 1 medium red onion, finely chopped
- 2 cloves garlic, crushed
- 1 tbsp mild curry powder
- 2 None stalks celery, trimmed and finely chopped
- 1 medium carrot, coarsely grated
- 1/4 cup reduced sodium chicken stock
- 2 tbsp oyster sauce
- 1 tbsp Japanese soy sauce
- 3 cups finely shredded Chinese cabbage
- 1 cup frozen baby peas
- 4 oz fried noodles
- 1/3 cup blanched almonds, toasted and coarsely chopped
- 2 None green onions, thinly sliced
- Heat oil in wok on high heat. Stir-fry ground turkey, red onion and garlic until turkey changes color. Add curry powder; stir-fry until fragrant.
- Add celery and carrot; stir-fry until vegetables are tender. Add stock, sauces, Chinese cabbage and peas; stir-fry until cabbage wilts.
- Serve stir-fry sprinkled with noodles, nuts and green onions.
