Hawaiian Cheesecake

  1. Sprinkle 3 tablespoons graham cracker crumbs on bottom of 9-inch square pan.
  2. Soften gelatin in water.
  3. Drain pineapple tidbits, reserving juice.
  4. Add enough water to make 3/4 cup and bring to boil.
  5. Dissolve gelatin.
  6. In small bowl mix cottage cheese at high speed until smooth, about 3 minutes.
  7. Add egg yolks, milk, lemon juice, Sweet*10, vanilla and salt; beat well.
  8. Blend in dissolved gelatin.
  9. Chill until mixture is thick, but not set. Beat egg whites until soft peaks form; gently fold in gelatin.
