Spiced Beer-Battered Fish
- 1/2 cup self-rising flour
- 1 tbsp mild paprika
- 1 None egg, lightly beaten
- 1 can (12 oz) cold beer
- None None Vegetable oil, to deep-fry
- 4 None firm white fish fillets, cut in half lengthwise
- None None Lemon wedges, to serve
- Place flour and paprika in a large bowl. Stir in egg. Gradually whisk in beer until a smooth batter forms.
- Pour oil into a large heavy-bottomed saucepan to a depth of 4 inches. Heat on medium-high heat (oil is ready when a cube of bread crisps quickly without absorbing oil).
- Dip fish, a piece at a time, into batter. Let any excess drain off. Deep-fry fish, in batches, for 3 mins or until golden brown and cooked. Using a slotted spoon, transfer fish to paper towels.
- Reheat oil between batches as necessary. Serve fish with lemon wedges.
