Warm Rice And Chickpea Salad
- 1 cup rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup raisins
- 1/4 cup dried apricots, chopped finely
- 2 None green onions, thinly sliced
- 2 tbsp toasted pine nuts
- None None FOR THE BALSAMIC ORANGE DRESSING
- 1 tsp finely grated orange peel
- 1/3 cup orange juice
- 1 tbsp balsamic vinegar
- 1 clove garlic, crushed
- 1 piece (1/4 inch) fresh ginger, grated
- Combine rice and 1 3/4 cups water in medium heavy-bottomed saucepan; bring to a boil. Reduce heat to low; simmer, covered, about 12 mins or until rice is tender. Remove from heat. Let stand, covered, for 10 mins. Fluff rice with fork.
- Meanwhile, for the balsamic orange dressing, whisk all ingredients in a small bowl.
- Place rice in large bowl with remaining ingredients and dressing; toss gently to combine.
