Warm Rice And Chickpea Salad

  1. Combine rice and 1 3/4 cups water in medium heavy-bottomed saucepan; bring to a boil. Reduce heat to low; simmer, covered, about 12 mins or until rice is tender. Remove from heat. Let stand, covered, for 10 mins. Fluff rice with fork.
  2. Meanwhile, for the balsamic orange dressing, whisk all ingredients in a small bowl.
  3. Place rice in large bowl with remaining ingredients and dressing; toss gently to combine.
