Steak With Bean Salad And Sweet Potato Wedges
- 4 cloves garlic, finely sliced
- 2 tbsp olive oil
- 1 tsp freshly ground black pepper
- 6 None steaks
- None None Sweet Potato Wedges
- 4 None red sweet potatoes, cut into long wedges
- 2 tsp olive oil
- 1 tsp sea salt
- None None Bean Salad
- 2 handfuls green beans, blanched
- 3/4 cup roasted almonds
- 1 large bunch fresh basil, leaves only
- 7 oz feta cheese, roughly broken up
- 1 None red onion, peeled, halved then finely sliced
- None None Dressing
- 2 cloves garlic, finely sliced
- 1 tsp Dijon mustard
- 1 tsp grainy mustard
- 6 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp lemon juice
- Preheat grill. Combine garlic, olive oil, black pepper and a pinch of salt. Marinate steaks for at least 15 mins. Cook on a hot grill or in a heavy-bottomed frying pan for 4 mins on 1 side then flip over and cook for 3 mins for medium-rare. Cover with foil and let rest for 10-15 mins.
- Meanwhile, preheat oven to 400u0b0F. Toss sweet potato wedges with oil and sea salt in a baking dish. Roast for 20-30 mins, or until golden.
- Gently toss bean salad ingredients together and season. Whisk together dressing ingredients then toss with salad.
- Serve steaks with bean salad and sweet potato wedges.
