Beef Tenderloin On Papaya Salad
- 1 clove garlic, peeled and finely chopped
- 1/4 cup fresh ginger, peeled and grated
- 2 tbsp honey + 1 tsp
- 1/4 cup soy sauce
- 5 tsp dry sherry
- 5 tsp balsamic vinegar
- 1 splash hot sauce
- 2 tbsp oil
- 3/4 lb beef tenderloin
- 2 None shallots, peeled and finely diced
- 1 None red chili pepper, deseeded and finely chopped
- 8 sprigs fresh cilantro, finely chopped + extra to garnish
- 3 tbsp sesame oil
- 1 None lime, juiced
- 2 None papayas, peeled, deseeded and cubed
- For the marinade, mix garlic, ginger, honey, soy sauce, sherry, vinegar and hot sauce. Heat oil in a pan and saute beef for about 5 mins then marinate for 1 hour.
- Preheat oven to 325u0b0F. Place beef on an oiled baking sheet and cook for about 20 mins. Remove from oven and let cool for 1 hour.
- To serve, mix shallots, chili, cilantro, sesame oil, lime juice and papaya then transfer to serving vessels. Slice beef and place on top of salad. Garnish with cilantro.
